Egglet is a fairly new egg-centric spot that focuses on Korean-Style breakfast egg sandwiches. It is located in La Jolla, in the strip mall by Regent's Road. If you tried parking in this area during the lunch hour on the weekdays, you know parking is really tight, both is the lack of spaces and the size of the parking spaces and lanes. It is usually a tight fit. Luckily, both times I went were on the weekend. They are open during the morning/brunch hours (usually closing at 2pm).
The first thing you see when you walk in are the ordering kiosks. It's as if this is their preferred way for the customers to order. I went ahead and used that. You can still order through the employee at the cashier station.
The menu system is pretty easy to use. You can easily customize the sandwiches and combos.
Although almost all of the breakfast sandwiches features (what else) eggs, you get of variety of proteins and sides to choose from (ham, sausage, and bacon). The breakfast sandwiches use brioche bread, and I believe it gets delivered fresh daily. They will usually have cheese (mozerella, cheddar or permesan) and/or shredded cabbage. There are other sandwiches such as chicken breast, shrimp and burgers. Sides include hash brown or salad.
The restaurant itself is a nice, clean, hi tech look. Employees are nice and focused on their job.
My first trip there, I was pretty hungry but my eyes were bigger than my stomach. I was craving sausage so I got the egg sandwich with 3 turkey sausage. I ordered it as a combo with 3 truffle hash brown and fresh squeezed Orange Juice.

There was some sauce on the side. Not sure what it is called but it's kinda sweet and can't put my finger on the flavors.
So, the good. Nice looking food. A lot of care on thre presentation, even for a somewhat fast food kind of restaurant. The bread was nicely toasted on the grill and seemed very fresh. The egg was nicely cooked (not dry nor runny) and seasoned well. The truffle hash browns were exceptional. Nice truffle flavor and salted just right. The orange juice was freshly squeezed as the employees were constantly working the juicer.
Now the bad. It wasn't really turkey sausage. I would call it turkey hotdog, because it was exactly the texture of hotdog. It was a big disappointment for me because I was expecting the traditional sausage. It kept me from fully enjoying the sandwich and I really wanted to like it.
So the first experience was ok but I wanted to give them another try.
The second time I did the Smoke Bacon Special which included bacon, omelet, dip cheese and shredded cabbage.

Again it was a nicely put together meal

So this visit, I just couldn't get into the sandwich. The omelet didn't have any seasoning. The bacon wasn't the traditional bacon, more like ham. It wasn't crispy. And I'm not into the shredded cabbage for some reason, so I should have omitted it. The biggest disappointed was the bread this time. It wasn't crispy. It was closer to french toast consistency. Unfortunately, the sandwich wasn't doing it for me so I wasn't that satisfied. The hash brown was still great.
This may be traditional for Korean breakfast sandwiches in Korea. . Will I be back again? Maybe. Maybe not. It's not the restaurant itself as they seems to be doing everything right. It may be that the Korean style of sandwiches are just not for me. One of these days I will make it to Korea and experience first hand. One thing, you should not go to Egglet and expecting another EggSlut (which I've been to in Vegas, and was really good).
I would say, give it a try, it may be your thing. It's still worth a try for people out there even though it's not my thing. I've also found that Japanese Curry is also not my thing, but that is another story.

Was not a fan of very fast-foodish Egglet, though the prices at the time of my visits seemed quite cheap. Those egg drop sandwiches have been a fad for a while now; though as usual we're a few years behind. It's going to be interesting to see how Egg Tuck will do when they open in Little Italy.
